Martabak Mesir



Martabak Mesir / Martabak Telur
Ala Yuli

Ingredients :
Wrapper :
6 Tbsp All Purpose Flour
3 Tbsp Rice Flour
3 Tbsp Tapioca Starch
3 eggs
1/2 tsp Salt
350 ml water

Curry Filling :
1 lb ground beef
3 Tbsp Olive Oil
1 Onion
2 Tbsp minced garlic
1 Tbsp white pepper
1/2 Tbsp Salt
1 Tbsp Garlic Powder
1 - 2 Tbsp Curry Powder
1 - 2 Tbsp Cayenne Powder
1 - 2 Tbsp Chili Pepper Flakes
1/2 Tsp Sugar
1-2 Tbsp Worchestershire sauce/Kecap Inggris (*optional)

Martabak Filling :
6 Eggs
5 Stalks Scallions
1 Tsp Salt
1 Tsp White Pepper

Directions :
I. Making Curry Filling 
Preheat pan with olive oil, add sliced onion sautéed well, add minced garlic.
Add ground beef, mixed well, when its cooked then add seasoning, and mixed well. Taste it and add more seasoning as you like.
II. Making Wrapper
Prepare a bowl mixed all ingredients with mixer until mixed well, batter will be very thin
Prepare crepes pan (I used 12” crepes pan) preheat
Pour batter into the pan, make it even spread all pan
When its cooked put in plate, and continued to make wrapper until its finish
III. Filling Mixed
Prepare a bowl, add eggs, salt, pepper mixed well
Add cooked curry filling
Add chopped onion
Mixed Well
IV. Folded and Frying
Prepare 2 pan, 1 pan for folding (preheat spray oil), 1 pan for deep frying preheat
Take a wrapper and lay down in pan/skillet, pour filling mixed, and folded like envelope.Wait 3-5 mins until the bottom cooked and flipped it.
When both of side cooked/firm enough, put that martabak to pan/skillet for deep frying (medium heat) until its golden brown

Kripik/Stick Bawang



Kripik Bawang/Stick Bawang

Ingredients :
200 gr All purpose flour
50 gr Tapioca Starch
1 egg
50 ml water
50 gr butter (4 Tbsp stick butter) melted
2 stalk scallions

Seasoning :
1 tsp garlic paste
1 tbsp garlic powder
1 tsp onion powder
1 tbsp white pepper powder
1 tsp salt
1/2 tsp sugar

Directions :
Prepare a bowl add flour, starch, melted butter, seasoning
Add egg and water mixed well, add chopped scallions, kneading with hand
Covered with kitchen towel, Let rest for 30minutes.
Use gloves to work the dough, and thin it with roller.
If using machine roller, sprinkle flour before you roll into machine
I use lasagna pasta roller (Kitchen Aid extension) to make it thin, using no 1 couple time, no 2, couple time, and no 3 couple time (sprinkle flour to make it not sticky to machine)
I use fettuccine pasta roller (Kitchen Aid extension) to make it like a stick
Use knife to cut as desire length
Preheat wok with oil (I use canola oil), and fried (low - medium heat) until its golden brown.

Nastar


Resep Nastar

Ingredients :
250 gr butter ( 2 sticks +2tbsp) - aku menggunakan butter Land O Lakes or any local butter will be fine. (I didn’t use margarine)
50 gr Confection sugar (1/2 cup)
2 Yolk
350 gr All Purpose Flour (2 cup)
2 Tbsp Milk Powder

Directions :
Softened butter in microwave for 20 secs 
Prepare a bowl, mix butter, sugar and eggs, mixed well around 1 minute
Add flour and milk powder, slowly mixed it together around 1-2 mins (don’t over mix)
Used gloves and take spoonful of batter and flattened in your hand, filling it with pineapple jam, and shape it round or any shape you want. (You can also use chocolate mold to make it easier and faster)
Arranged the round nastar into 2-3 baking pan with 2 inch apart
Preheat oven 280 F. When its reach it temperature, put the baking pan in oven, and bake for around 20-30 minutes (depend on oven, mine 20 minutes)
After 20 minutes take it out and put egg wash on nastar ( I used mixed yolk+milk+oil) 
Then put back in oven again for 20 - 30 mins (depend on oven) look for slightly golden brown color in top.
When its done, pull out in oven and put in dry rack to cool completely

Selai Nanas


Resep Selai Nanas

Ingredients :
1 can Crush pineapple (I used Dole with pineapple juice)
1/2 cup sugar
1-2 tsp ground cinnamon
1-2 tsp ground cloves

Directions : 
Open the can and drain the juice (if want more smooth pineapple used food processor)
Prepare a pot on medium heat (I used no 4), pour the pineapple 
Add sugar, cinnamon, ground cloves to the pot
Mixed well with spatula
Set the heat low to medium (2-4)
Stir occasionally, make sure not stick to bottom pan
Keep in low heat until its become a jam
Once it cooldown can store in refrigerator or freezer for longer time

Catatan :
Ini resep selai nanas express, karena menggunakan nanas kalengan, berhubung berupa kaleng jadi bisa selalu stocks dirumah dan bisa bikin anytime we want. 

Menurutku Rasanya ga kalah enak dengan yang menggunakan fresh nanas..karena aku udah coba keduanya..

Untuk takaran gula, kayu manis dan cengkeh..ukuran diatas ukuran kira2..silakan dites dulu rasanya dan sesuaikan dgn selera..misal kurang manis berarti gula perlu ditambah, warna kurang coklat berarti tambah kayu manis.


Bikin selai ini ga susah cuma butuh kesabaran, karena manasinnya harus low and slow, api kecil dan mesti diaduk..untuk sampe kering adonan selai mungkin butuh waktu sekitar 2-3jam(tergantung kompor juga), kuncinya cuma sabar 

Kacang Disko



Kacang disko

Ingredients :
300 gr peanuts ( I used salted roasted peanuts ready to eat)
2 tbsp cayenne powder
1 tbsp garlic powder 
1 tbsp salt
5 tbsp sugar
1 tsp white pepper 
200 gr all purpose flour
3 tbsp tapioca flours

3 eggs beaten

Kacang Disko

Cara Membuatnya :
Siapkan wadah besar, masukan tepung dan bumbunya, aduk rata
Masukin telur yang sudah dikocok, aduk, kemudian masukin kacangnya
Aduk dengan bamboo spatula, dan gunakan tangan (with gloves) agar mudah mencampur semua bahan dengan rata.
Panaskan wajan dengan minyak. Saat sudah panas, ambil bahan adonan segumpal, karena adonan bergumpal, maka saat menjatuhkan ke minyak panas, dipisahkan terlebih dahulu menggunakan jari, aku misahkan sekiranya 1-3 kacang per drop. 
Tangan kiri siap dengan spatula untuk mengaduk adonan yang sudah di dalam wajan, agar tidak hangus mesti di aduk aduk di penggorengannya.
Batch pertama angkat, dan tiriskan kemudian test/koreksi rasa, Jika kurang pedas bisa tambahkan cayenne powder, jika kurang asin bisa tambahkan garam . (aku menggunakan kacang siap makan yang sudah di bumbui garam dari sananya, sehingga penggunaan garam di adonan lebih sedikit).
Jika rasa sudah sesuai selera kemudian ulangi lagi langkah sebelumnya sampai adonan habis..

Catatan :
Saat menggoreng, antara tangan kanan yang melepaskan kacang dari adonan menggumpal, dan tangan kiri yang mengaduk di wajan, butuh simultan berbarengan, karena kacang akan cepat matangnya, jadi tangan kiri harus siap sedia mengaduknya di wajan, dan segera diangkat dan tiriskan ketika warna kulit kacang sudah berwarna kecoklatan.

Kaastangel


Resep Kaastangel

Ingredients :
150 gr Butter ( 1 stick (8Tbsp)+ 3 Tbsp) - I used Land O Lakes butter/Kerry Gold
100 gr Triple Cheddar Cheese ( I used Kraft Fine shredded)
200 gr All Purpose Flour ( 1 1/4 Cup)
1 Tbsp Milk Powder
1 Egg Yolk

Topping :
Edam Cheese 

Direction :
Softened butter in microwave 20 secs
Prepare a bowl add butter and egg Mix in low power 
Add cheese, mixed well
Add flour and milk powder mix well
Kneading with hand, and flat it with rolling pin
Cut in small rectangle, arrange in baking pan and egg wash tops with grated edam cheese.
Preheat oven 275 F - 300 F. Bake for 10 - 15 mins or until golden brown (depend on oven) 

Catatan :

  1. Aku menggunakan mentega local merk Land O Lakes, Kerry Gold butter dari Costco juga enak buat bikin kue kering, alternatif jika tidak mau tergantung dengan wisman butter.
  2. Untuk suhu dan waktu panggang sangat tergantung oven. Awalnya aku manggang 275F selama 10 menit, dan belum mateng juga, kemudian aku naikan 300F selama 5 menit, suhu dan waktu sangat tergantung oven, jadi mulai dari suhu rendah dulu, kemudian dinaikan. Goalnya adalah kue keringnya garing dan tidak gosong (warna coklat muda)

Roti Boy



Sweet Bun Recipe/ Roti Manis 

Ingredients

  • 1/2 cup white sugar
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 1 tablespoon active dry yeast
  • 4 cups bread flour
  • 2 eggs, beaten (divided)
  • 6 tablespoons vegetable oil
  • 2 teaspoons salt
  • 2 teaspoons water

Topping :
1 1/3 Cup (160gr) Confection Sugar
1 Stick Butter (8Tbsp) + 6 Tbsp or 200 gr Butter, softened
3 Eggs
1 1/2 Cup (200 gr) All Purpose Flour
2 Tbsp coffee dissolved in 1 Tbsp water
A pinch ground cinnamon

Bake 325F for 10 -12 minutes

Kue Cubit


Kue Cubit

Ingredients :
3 Eggs
8 Tbsp Sugar 
1 1/2 Tsp Yeast
300 ml water
6 Tbsp Milk
2 cup All purpose flour
3/4 tsp Baking Powder
6 Tbsp Butter
Chocolate Sprinkles

Direction :
Prepare a bowl, mixed egg and sugar 
Add water and yeast, mixed well
Add milk, and flour mixed well
Rest the batter for 30 minutes or more
Add baking powder, mixed and add melted butter mixed it
Preheat the pan brush with butter.
Cooked with low heat for 3-5 mins, half done sprinkle chocolate sprinkles in top, and cooked for 1-2 mins, until its done.
Served hot for more soft and fluffy. 

Spicy and Sour Chicken




Spicy Sour Chicken 

Ingredients:
Chicken 
Carrots
Green peas

Sauce :
1 large onion
2 tbsp minced garlic
2 tomatoes 
1/2 cup vinegar 
1 1/2 cup water
1/2 cup ketchup 
4 tbsp saos sambal abc
1 tbsp salt
1 tbsp white pepper
1 tbsp black pepper 
1 tbsp garlic powder
1 tsp sugar
3 tbsp olive oil

Directions :
Cut chicken into cube, season with salt and pepper. Dip into egg and flour mixed (all purpose flour+corn starch) fried the battered chicken. Set aside

Preheat skillet with olive oil, saute onion and garlic. Add slices tomatoes.
Prepare bowl mixed water, vinegar, ketchup, and others seasoning. Mixed well and pour to skillet. 
Add carrots and cooked until carrots tender enough, add green peas. Cooked for couple minutes and taste it. 
*Can add more hot sauce to more spicy or ketchup if need more sweet or vinegar if need more sour.

When the flavor is good for your taste then add the fried chicken into the skillet, mixed well, cooking for couple minutes until ready to served.
